Double Chocolate, Chocolate Chip Cookies
 

These cookies must be a chocaholic favs!

Ingredients:

115g butter, at room temperature 
200g suagr
112g dark chocolate, melted
2 eggs
2 tsps vanilla essence
190g soft flour
90g white chocolate chips
215g dark chocolate chips
45g milk chocolate, chocolate chips

Preparation:

1. Beat butter and sugar until light and fluffy. while beating mix in the melted chocolate.
2. Add the essence. Add eggs one at a time, with 2 tbsp of flour; beating well after each addition.
3. After all the eggs have been incorporated gradually mix in the remaining flour.
4. Add the chocolate chips.
5. Bake for approximately 10 minutes in a preheated oven at 180C.

Gingerbread Man

 

Ingredients:

350g plain flour
175g light soft brown sugar
100g butter
1 medium egg
4 tbsps of golden syrup
1 tsp bicarbonate of soda
½ tsp ground ginger

 Preparation:

1.      Put the flour, butter, ground ginger and bicarbonate of soda in a mixing bowl. Mix it all together with fingertips until crumbly.
2.      Add sugar, syrup and egg and mix until it forms a firm pastry mix.
3.      Pre-heat the oven to 180°C
4.      Roll out the pastry to about 5mm thick. Make sure the surface and the rolling pin are well dusted with flour.
5.      Cut out the shapes with a knife and/or pastry cutter.
6.      Place the cut out pastry on a greased or non-stick baking tray.
7.      Bake for approximately 15 minutes.
8.      Decorate the gingerbread men.

Almond biscuits

Ingredients:

 400g ground almonds
400g sugar
3-4 egg whites
1 tsp orange flower water
1 tsp almond essence

 Preparation:

 1. To prepare the almond paste; blanch the almonds and blend in a food processor. Add sugar and bind mixture with the egg whites, flavour with almond essence and orange flower water.

2. Make into balls and place on rice paper. Place an almond or 1/4 glacee cherry on each. Leave in fridge for 20 minutes.

3. Transfer on another dish and bake in a preheated oven at 180C for about 10 minutes.
